Most of them do.
It does depend on the source material being shown though.
Some non-HD channels also transmit in 5.1

big ask m8,most decent movie channels on the big providers especially HD movie channels showing fairly recent movies, your reciever should give you an indication on the on screen banner a liitle symbol or somthing, and your amp should tell you if applicable

King of Sat allows you to search for Dolby Digital channels.
This will give you a list of everything (SD/HD/Radio, FTA & Encrypted) with a DD audio track. Whether it's in 5.1 or not, as already stated, will depend on what's being transmitted.
You'll probably find it changes between 2.1 and 5.1. Also, just because a channel is in HD doesn't mean it's got a DD audio stream, nevermind 5.1, some only broadcast standard audio.
BBC HD on astra 28.2 carry 5.1 audio tracks on many programs. They also have a test card, when they're not transmitting programs or previews, which provides a test tone for each speaker in a 5.1 setup. It also displays on the test card which speaker it's sending the tone to.
